ishinoko kitchen is a network of hunters, farmers, foragers, fermenters, chefs, and food enthusiasts that seeks to foster a curiosity towards the food we eat. Our community connects overseas chefs, home cooks and food professionals to the hidden corners of Japan.
ajimi ACADEMY
ajimi academy is a residency-style program run by ishinoko kitchen that brings together chefs from different cultural and technical backgrounds.
The program is designed with the mindset of learning by doing, where we connect global culinary perspectives with the traditions of a specific place.
The inaugural 2026 edition will take place in Owase, Mie-Prefecture, October 18-25th.

"Chef Tours" are educational courses with the aim to share Japanese food culture with passionate chefs and home cooks. Since 2020, we have been inviting renowned chefs from in- and outside Japan to cook in ishinoko festival’s kitchen. By fusing ingredients from Takigahara with their techniques and flavours from home, chefs build bridges across borders and foster community through a mutual apprecation of food.
